I am renowned for my elegant decorating style, which also extends to a lot of birthday cake designs. However, sometimes I get to try my hand at completely new techniques and styles which I really enjoy as a cake artist. Whenever I have such an opportunity, I make sure I design a unique piece of edible art which still has the signature neatness of my other cake designs.

This was my first time experimenting with modern textures and ‘messy’ designs, and was inspired by the art of pressed flowers. Since cosmos are ideal for pressing, it made sense to incorporate these flowers into the design rather than roses, for example. The different shades of colour on the icing were added using dry food dust colour, to resemble the blotched paper onto which flowers are often pressed. I finished off the design with handmade cosmos flowers, giving this cake the unmistakeable signature of The Rose Cake Parlour.
Quilling was not a technique that I had ever used in my life until I made this cake! It looks deceptively simple, but in actual fact is very time-consuming. Each piece of icing was cut using special cutters, and then cut to size using a very sharp knife. After that each strip was then curled around a cocktail stick and then shaped to perfection. Not an easy task, but well worth the effort!
This was my first time carving a cake, and I must say I thoroughly enjoyed the experience! The cake was essentially two separate tiers, with each part having been separately carved. The sponge itself was a luxurious rich chocolate cake filled with decadent white Belgian chocolate ganache – not surprisingly this cake was very well received by the birthday boy and his parents!
