I have recently added quite a few new flavours to the list, and here are some of my favourites:
1.) Raspberry & White Chocolate Mud Cake
This has to be my newest favourite flavour so far, and I have yet to meet someone who samples this flavour and does not fall in love with it!
I have to admit, the inclusion of the word ‘mud’ might be slightly confusing, and yes, slightly unappetising too! So let me explain. A mud cake is essentially a very rich, dense cake that has a tight crumb and invariably contains melted chocolate in the batter. And this is exactly what my raspberry and white chocolate mud cake is like too – I use premium-quality white Belgian chocolate, delicious raspberries and a hint of vanilla in the batter that really is a winning combination and makes for a totally decadent and scrumptious wedding cake that is sure to be a hit with your guests.
2.) Blueberry & white chocolate mud cake
This is made in exactly the same way as raspberry and white chocolate mud cake, except that the raspberries are replaced with blueberries. However, rather than using plain white Belgian chocolate ganache as a filling I also give my couples the option of going for a lemon ganache filling, which goes beautifully well with blueberries and is a wonderful alternative to a classic blueberry and lemon cake.
3.) Pistachio & rose
This is another new flavour and one which is again proving to be very popular with couples. The sponge has a lovely texture, is not too sweet, and goes perfectly with a rich white chocolate ganache filling. In the winter months it may also be possible to use Swiss Meringue buttercream as a filling instead of ganache, but if your venue is some distance away then I would recommend ganache as it is a lot more stable than buttercream which would pretty much eliminate the risk of the cake layers sliding during transportation.
